Nut Brittle

  1. Line a baking sheet with parchment paper or a silicone mat and set aside.
  2. In a large saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring constantly, until the sugar has dissolved.
  3. Bring the mixture to a boil and continue to cook, without stirring, until it reaches 300°F on a candy thermometer.
  4. Remove from heat and stir in the vanilla extract, baking soda, and nuts. Be careful as the mixture will bubble up.
  5. Immediately pour the mixture onto the prepared baking sheet and spread it out evenly using a spatula. Let cool for about 20 minutes.
  6. Once cooled, break the brittle into bite-sized pieces and store in an airtight container.
