Nut Brittle
Ingredients:
- 1 cup peanuts
- 1 cup almonds
- 1 cup cashews
- 1 cup sugar
- 1/2 cup corn syrup
- 1/4 cup water
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
Instructions:
- Line a baking sheet with parchment paper or a silicone mat and set aside.
- In a large saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring constantly, until the sugar has dissolved.
- Bring the mixture to a boil and continue to cook, without stirring, until it reaches 300°F on a candy thermometer.
- Remove from heat and stir in the vanilla extract, baking soda, and nuts. Be careful as the mixture will bubble up.
- Immediately pour the mixture onto the prepared baking sheet and spread it out evenly using a spatula. Let cool for about 20 minutes.
- Once cooled, break the brittle into bite-sized pieces and store in an airtight container.
