Nougat

Instructions:

  1. In a large saucepan, combine sugar, corn syrup, honey, and water. Cook over medium heat, stirring occasionally, until mixture comes to a boil.
  2. Using a candy thermometer, cook mixture until it reaches the soft ball stage (235-240 degrees F).
  3. Meanwhile, in a separate bowl, beat egg whites until stiff peaks form.
  4. Slowly pour hot sugar mixture over the beaten egg whites, beating constantly until the mixture is thick and glossy.
  5. Add vanilla extract and continue beating until well combined.
  6. If desired, fold in chopped nuts.
  7. Pour mixture into a greased 9x9 inch pan and let cool completely.
  8. Once cooled, cut nougat into desired shapes and enjoy!
