No-Bake Cookies
Ingredients:
- 2 cups oats
- 1 cup peanut butter
- 1/2 cup honey
- 1/2 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/2 cup shredded coconut
- 1/4 cup chopped nuts (optional)
Instructions:
- In a small saucepan, combine peanut butter, honey, and cocoa powder over low heat, stirring until well combined.
- Remove from heat and stir in oats and vanilla extract. If desired, mix in chopped nuts for added texture.
- Using a spoon or cookie scoop, scoop out mixture and form into balls. Coat each ball with shredded coconut. Place on a lined baking sheet or plate and refrigerate for 30 minutes to set.
- Enjoy your no-bake cookies! Store in an airtight container in the fridge for up to a week.
