No-Bake Cookies

  1. In a small saucepan, combine peanut butter, honey, and cocoa powder over low heat, stirring until well combined.
  2. Remove from heat and stir in oats and vanilla extract. If desired, mix in chopped nuts for added texture.
  3. Using a spoon or cookie scoop, scoop out mixture and form into balls. Coat each ball with shredded coconut. Place on a lined baking sheet or plate and refrigerate for 30 minutes to set.
  4. Enjoy your no-bake cookies! Store in an airtight container in the fridge for up to a week.
