Nicoise Salad

  1. In a medium pot, boil the potatoes until fork tender. Drain and let cool, then cut into quarters.
  2. In a large pot, bring water to a boil and add the green beans. Cook for 3-4 minutes, then remove and place in an ice bath to stop the cooking process.
  3. In the same pot, add the eggs and cook for 8-10 minutes. Remove and place in an ice bath, then peel and quarter.
  4. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.
  5. In a large mixing bowl, combine the potatoes, green beans, cherry tomatoes, red onion, black olives, and tuna.
  6. Pour the dressing over the salad and toss to combine.
  7. Plate the salad and top with quartered eggs and fresh parsley for garnish.
  8. Serve and enjoy your delicious Nicoise Salad!
