Nicoise Salad
Ingredients:
- 1 pound small red potatoes
- 1 pound green beans, trimmed and halved
- 4 large eggs
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1 pound cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/2 cup sliced black olives
- 1 pound canned tuna, drained
- Fresh parsley for garnish
Instructions:
- In a medium pot, boil the potatoes until fork tender. Drain and let cool, then cut into quarters.
- In a large pot, bring water to a boil and add the green beans. Cook for 3-4 minutes, then remove and place in an ice bath to stop the cooking process.
- In the same pot, add the eggs and cook for 8-10 minutes. Remove and place in an ice bath, then peel and quarter.
- In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.
- In a large mixing bowl, combine the potatoes, green beans, cherry tomatoes, red onion, black olives, and tuna.
- Pour the dressing over the salad and toss to combine.
- Plate the salad and top with quartered eggs and fresh parsley for garnish.
