New Mexico Green Chile Stew
Ingredients:
- 2 pounds pork shoulder, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 cups water
- 1 pound green chiles, roasted, peeled, and chopped
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- In a large pot, heat vegetable oil over medium-high heat.
- Season pork with salt and pepper, then add to pot and cook until browned on all sides.
- Add chopped onion and minced garlic to the pot and cook until softened.
- Pour in chicken broth and water, and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour or until pork is tender.
- Stir in roasted green chiles, diced tomatoes, dried oregano, and ground cumin.
- Cover and simmer for an additional 30 minutes.
- Adjust seasoning with salt and pepper to taste.
