  1. In a large pot, heat vegetable oil over medium-high heat.
  2. Season pork with salt and pepper, then add to pot and cook until browned on all sides.
  3. Add chopped onion and minced garlic to the pot and cook until softened.
  4. Pour in chicken broth and water, and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1 hour or until pork is tender.
  6. Stir in roasted green chiles, diced tomatoes, dried oregano, and ground cumin.
  7. Cover and simmer for an additional 30 minutes.
  8. Adjust seasoning with salt and pepper to taste.
