Napa Cabbage Salad
Ingredients:
- 1 head napa cabbage, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 carrot, peeled and grated
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- 1/4 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the napa cabbage, red bell pepper, carrot, almonds, cranberries, green onions, and cilantro.
- In a small bowl, whisk together the olive oil, honey, and apple cider vinegar until well combined.
- Pour the dressing over the cabbage mixture and toss to coat evenly.
- Season with salt and pepper to taste.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
