Mussels in White Wine Sauce
Ingredients:
- 2 pounds fresh mussels, scrubbed and debearded
- 1 cup dry white wine
- 4 cloves garlic, minced
- 1 shallot, minced
- 1/4 cup butter
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions:
- In a large pot, bring the white wine, minced garlic and shallot to a simmer over medium heat.
- Add in the mussels and cover the pot. Cook for 5-7 minutes, or until the mussels have opened up.
- Using a slotted spoon, remove the mussels and place them in a serving bowl, reserving the liquid in the pot.
- In a separate pan, melt the butter over medium heat. Once melted, add in the chopped parsley, red pepper flakes, and a pinch of salt and pepper. Cook for 1-2 minutes.
- Pour the butter mixture over the reserved liquid in the pot and bring to a boil.
- Once boiling, reduce the heat and let the sauce simmer for 3-4 minutes.
- Pour the sauce over the mussels in the serving bowl and toss lightly to coat.
- Serve hot with crusty bread for dipping.
