Mussels in White Wine Sauce

  1. In a large pot, bring the white wine, minced garlic and shallot to a simmer over medium heat.
  2. Add in the mussels and cover the pot. Cook for 5-7 minutes, or until the mussels have opened up.
  3. Using a slotted spoon, remove the mussels and place them in a serving bowl, reserving the liquid in the pot.
  4. In a separate pan, melt the butter over medium heat. Once melted, add in the chopped parsley, red pepper flakes, and a pinch of salt and pepper. Cook for 1-2 minutes.
  5. Pour the butter mixture over the reserved liquid in the pot and bring to a boil.
  6. Once boiling, reduce the heat and let the sauce simmer for 3-4 minutes.
  7. Pour the sauce over the mussels in the serving bowl and toss lightly to coat.
  8. Serve hot with crusty bread for dipping.
