Mushroom Soup

  1. In a large pot, melt butter over medium heat.
  2. Add sliced mushrooms and diced onions. Cook until onions are translucent and mushrooms are softened, about 5 minutes.
  3. Add minced garlic and cook for an additional minute.
  4. Pour in chicken or vegetable broth and bring to a boil.
  5. Reduce heat and let the soup simmer for about 10 minutes.
  6. Using an immersion blender or transferring to a blender, blend the soup until smooth.
  7. Stir in heavy cream and season with salt and pepper to taste.
  8. Garnish with chopped parsley, if desired.
