Mushroom Soup
Ingredients:
- 1 lb mushrooms, sliced
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish (optional)
Instructions:
- In a large pot, melt butter over medium heat.
- Add sliced mushrooms and diced onions. Cook until onions are translucent and mushrooms are softened, about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in chicken or vegetable broth and bring to a boil.
- Reduce heat and let the soup simmer for about 10 minutes.
- Using an immersion blender or transferring to a blender, blend the soup until smooth.
- Stir in heavy cream and season with salt and pepper to taste.
- Garnish with chopped parsley, if desired.
