Muffins

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. If desired, fold in any optional add-ins.
  6. Scoop the batter into the prepared muffin pan, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool for a few minutes before removing them from the pan.
  9. Enjoy your freshly baked muffins!
