Muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- Optional add-ins: chocolate chips, blueberries, nuts
Instructions:
- Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- If desired, fold in any optional add-ins.
- Scoop the batter into the prepared muffin pan, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let the muffins cool for a few minutes before removing them from the pan.
