Molasses Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup molasses
- 1 large egg, room temperature
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- Additional granulated sugar for rolling
Instructions:
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add in the molasses and egg and mix until well combined.
- In a separate bowl, mix together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Add the dry ingredients into the wet ingredients and mix until a dough forms.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours.
- Preheat the oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
- Roll the chilled dough into small balls, about 1 inch in diameter.
- Roll each ball in additional granulated sugar and place on the prepared baking sheet.
- Bake the cookies for 10-12 minutes, until set but still soft in the center.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
