Molasses Cookies

  1. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  2. Add in the molasses and egg and mix until well combined.
  3. In a separate bowl, mix together the flour, baking soda, cinnamon, ginger, cloves, and salt.
  4. Add the dry ingredients into the wet ingredients and mix until a dough forms.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours.
  6. Preheat the oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
  7. Roll the chilled dough into small balls, about 1 inch in diameter.
  8. Roll each ball in additional granulated sugar and place on the prepared baking sheet.
  9. Bake the cookies for 10-12 minutes, until set but still soft in the center.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
