Minestrone Soup
Ingredients:
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 1 can red kidney beans, drained and rinsed
- 4 cups chicken or vegetable broth
- 1 cup small pasta
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté for 2-3 minutes.
- Add diced carrots, celery, and zucchini. Sauté for 5 minutes.
- Add can of diced tomatoes and drained kidney beans. Stir and cook for another 5 minutes.
- Pour in chicken or vegetable broth and bring to a boil.
- Add dried oregano and basil, and season with salt and pepper to taste.
- Reduce heat and let simmer for 20-25 minutes.
- In a separate pot, cook the pasta according to package instructions. Drain and set aside.
- Add cooked pasta to the soup and let simmer for an additional 10 minutes.
- Taste and adjust seasonings as needed.
- Serve hot and enjoy your homemade Minestrone Soup!
