Minestrone Soup

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté for 2-3 minutes.
  3. Add diced carrots, celery, and zucchini. Sauté for 5 minutes.
  4. Add can of diced tomatoes and drained kidney beans. Stir and cook for another 5 minutes.
  5. Pour in chicken or vegetable broth and bring to a boil.
  6. Add dried oregano and basil, and season with salt and pepper to taste.
  7. Reduce heat and let simmer for 20-25 minutes.
  8. In a separate pot, cook the pasta according to package instructions. Drain and set aside.
  9. Add cooked pasta to the soup and let simmer for an additional 10 minutes.
  10. Taste and adjust seasonings as needed.
  11. Serve hot and enjoy your homemade Minestrone Soup!
