Minestrone

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, celery, and carrots, and sauté until vegetables are tender.
  2. Add the diced tomatoes, kidney beans, cannellini beans, chicken or vegetable broth, oregano, and basil. Stir to combine.
  3. Bring the mixture to a boil, then reduce heat to low and let simmer for 20 minutes.
  4. Add in the uncooked pasta and continue to simmer for another 10-15 minutes, until the pasta is cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot with freshly grated Parmesan cheese on top, if desired.
