Minestrone
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 can (14.5oz) diced tomatoes
- 1 can (15oz) kidney beans, drained and rinsed
- 1 can (15oz) cannellini beans, drained and rinsed
- 4 cups chicken or vegetable broth
- 1 cup uncooked small pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Freshly grated Parmesan cheese (optional)
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion, garlic, celery, and carrots, and sauté until vegetables are tender.
- Add the diced tomatoes, kidney beans, cannellini beans, chicken or vegetable broth, oregano, and basil. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let simmer for 20 minutes.
- Add in the uncooked pasta and continue to simmer for another 10-15 minutes, until the pasta is cooked through.
- Season with salt and pepper to taste.
- Serve hot with freshly grated Parmesan cheese on top, if desired.
