Mexican Street Corn
Ingredients:
- 4 ears of corn
- ¼ cup mayonnaise
- ¼ cup sour cream
- ¼ cup cotija cheese, crumbled
- 1 tsp chili powder
- ½ tsp smoked paprika
- Juice of 1 lime
- Fresh cilantro, chopped
- Salt and pepper to taste
- 1 lime, cut into wedges
Instructions:
- Preheat grill to medium-high heat.
- Husk the corn and brush with olive oil.
- Grill the corn until lightly charred, about 10-12 minutes, turning frequently.
- In a small bowl, mix together mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, lime juice, and cilantro.
- Remove corn from the grill and brush with the mayo mixture.
- Sprinkle with extra cotija cheese, chili powder, and smoked paprika.
- Serve with lime wedges and enjoy!
