Mexican Street Corn

  1. Preheat grill to medium-high heat.
  2. Husk the corn and brush with olive oil.
  3. Grill the corn until lightly charred, about 10-12 minutes, turning frequently.
  4. In a small bowl, mix together mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, lime juice, and cilantro.
  5. Remove corn from the grill and brush with the mayo mixture.
  6. Sprinkle with extra cotija cheese, chili powder, and smoked paprika.
  7. Serve with lime wedges and enjoy!
