Mexican Casserole
Ingredients:
- 1 pound ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 can diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/4 cup sliced black olives
- 1/4 cup chopped cilantro
- Tortilla chips, crushed
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until it is browned and cooked through. Drain and set aside.
- In the same skillet, cook the onions and red bell pepper until they are softened, about 5 minutes.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
- Add the cooked ground beef back into the skillet and mix everything together.
- In a 9x13 inch baking dish, place a layer of crushed tortilla chips on the bottom.
- Pour the beef mixture over the tortilla chips, spreading it out evenly.
- Sprinkle the shredded cheddar cheese on top of the beef mixture.
- Add a layer of crushed tortilla chips over the cheese.
- Sprinkle black olives and cilantro on top of the tortilla chips.
- Bake for 20 minutes, or until the cheese is melted and the casserole is heated through.
- Serve hot and enjoy your delicious Mexican Casser
