Mexican Casserole

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until it is browned and cooked through. Drain and set aside.
  3. In the same skillet, cook the onions and red bell pepper until they are softened, about 5 minutes.
  4. Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
  5. Add the cooked ground beef back into the skillet and mix everything together.
  6. In a 9x13 inch baking dish, place a layer of crushed tortilla chips on the bottom.
  7. Pour the beef mixture over the tortilla chips, spreading it out evenly.
  8. Sprinkle the shredded cheddar cheese on top of the beef mixture.
  9. Add a layer of crushed tortilla chips over the cheese.
  10. Sprinkle black olives and cilantro on top of the tortilla chips.
  11. Bake for 20 minutes, or until the cheese is melted and the casserole is heated through.
