Meringue

  1. Preheat oven to 225 degrees F (110 degrees C).
  2. In a large bowl, beat egg whites until foamy.
  3. Add cream of tartar and continue to beat until soft peaks form.
  4. Sift in sugar, a little at a time, while continuing to beat until stiff peaks form.
  5. Beat in vanilla extract.
  6. Line a baking sheet with parchment paper.
  7. Spoon or pipe the meringue onto the parchment paper in desired shapes.
  8. Bake for 1 hour, or until meringues are dry and crisp.
  9. Turn off oven and leave meringues inside to cool completely before removing.
