Manicotti
Ingredients:
- 1 package of manicotti shells
- 1 pound Italian sausage
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1/2 cup chopped fresh spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce
- 1/4 cup chopped fresh parsley
Instructions:
- Preheat your oven to 375 degrees F.
- Cook the manicotti shells according to package instructions until al dente, about 8 minutes. Drain and set aside.
- In a large pan, cook the Italian sausage over medium-high heat until browned and cooked through, breaking it up into small pieces.
- Add the diced onion and minced garlic to the pan with the sausage and cook until the onion is tender.
- Stir in the chopped spinach and cook until wilted.
- In a separate bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper until well combined.
- Using a spoon, fill each manicotti shell with the cheese mixture.
- In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom.
- Arrange the stuffed manicotti shells in a single layer on top of the sauce.
- Pour the remaining marinara sauce over the top of the manicotti.
