Macaroons
Ingredients:
- 2 cups almond flour
- 1 1/2 cups powdered sugar
- 3 large egg whites, room temperature
- 1/4 tsp cream of tartar
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- Food coloring (optional)
- Filling of your choice (chocolate, jam, etc)
Instructions:
- In a mixing bowl, sift together almond flour and powdered sugar.
- In a separate bowl, beat egg whites until foamy, then add cream of tartar. Continue beating until soft peaks form.
- Gradually add in granulated sugar while continuing to beat until stiff peaks form.
- Stir in vanilla extract and food coloring (if desired).
- Sift in the almond flour mixture and gently fold into the egg white mixture until fully combined.
- Spoon mixture into a piping bag and pipe onto a lined baking sheet in small rounds.
- Preheat your oven to 300°F (150°C).
- Let the macaroons sit at room temperature for about 30 minutes, until a skin forms on the surface of the cookies.
- Bake for 15-18 minutes, or until the macaroons are set and can easily be lifted off the baking sheet.
- Let the macaroons cool completely before filling with your desired filling.
