London Broil
Ingredients:
- 1 London broil, approximately 2-3 pounds
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- In a large resealable plastic bag, combine the soy sauce, Worcestershire sauce, minced garlic, dried thyme, dried rosemary, olive oil, salt, and pepper. Mix well.
- Place the London broil in the bag, making sure to coat it with the marinade. Seal the bag and let it marinate in the refrigerator for at least 4 hours, or overnight for best results.
- When ready to cook, preheat your oven to 375 degrees F. Take the London broil out of the marinade and pat dry with paper towels. Discard the marinade.
- Heat a large cast iron skillet over high heat. Place the London broil in the skillet and sear for 2-3 minutes on each side, until browned.
- Transfer the skillet with the London broil to the oven and cook for 15-20 minutes, or until desired level of doneness is reached. Use a meat thermometer to ensure the internal temperature reaches at least 145 degrees F for medium-rare, or 160 degrees F for medium.
- Remove the London broil from the oven and let it rest for 5-10 minutes before slicing against the grain and serving.
