London Broil

  1. In a large resealable plastic bag, combine the soy sauce, Worcestershire sauce, minced garlic, dried thyme, dried rosemary, olive oil, salt, and pepper. Mix well.
  2. Place the London broil in the bag, making sure to coat it with the marinade. Seal the bag and let it marinate in the refrigerator for at least 4 hours, or overnight for best results.
  3. When ready to cook, preheat your oven to 375 degrees F. Take the London broil out of the marinade and pat dry with paper towels. Discard the marinade.
  4. Heat a large cast iron skillet over high heat. Place the London broil in the skillet and sear for 2-3 minutes on each side, until browned.
  5. Transfer the skillet with the London broil to the oven and cook for 15-20 minutes, or until desired level of doneness is reached. Use a meat thermometer to ensure the internal temperature reaches at least 145 degrees F for medium-rare, or 160 degrees F for medium.
  6. Remove the London broil from the oven and let it rest for 5-10 minutes before slicing against the grain and serving.
