Lobster Thermidor
Ingredients:
- 1 lb cooked lobster meat, chopped
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 tsp Dijon mustard
- 1/2 cup grated Gruyere cheese
- 1/4 cup grated Parmesan cheese, divided
- 1/4 cup white wine
- 2 tbsp brandy or cognac
- Salt and pepper to taste
- Parsley, chopped for garnish
Instructions:
- In a large skillet, melt butter over medium heat. Add flour and whisk to combine, cooking for 1-2 minutes until slightly golden in color.
- Slowly pour in milk, whisking constantly, until mixture thickens and becomes smooth.
- Add Dijon mustard, Gruyere cheese, and half of the Parmesan cheese. Stir until melted and well combined.
- Stir in white wine and brandy, cooking for an additional 2-3 minutes until mixture thickens.
- Add chopped lobster meat to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until lobster is heated through.
- Season with salt and pepper to taste.
- Spoon mixture into a large baking dish. Sprinkle remaining Parmesan cheese on top.
- Place under broiler for 2-3 minutes, until top is golden and bubbly.
- Garnish with chopped parsley and serve hot.
