Lobster Thermidor

  1. In a large skillet, melt butter over medium heat. Add flour and whisk to combine, cooking for 1-2 minutes until slightly golden in color.
  2. Slowly pour in milk, whisking constantly, until mixture thickens and becomes smooth.
  3. Add Dijon mustard, Gruyere cheese, and half of the Parmesan cheese. Stir until melted and well combined.
  4. Stir in white wine and brandy, cooking for an additional 2-3 minutes until mixture thickens.
  5. Add chopped lobster meat to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until lobster is heated through.
  6. Season with salt and pepper to taste.
  7. Spoon mixture into a large baking dish. Sprinkle remaining Parmesan cheese on top.
  8. Place under broiler for 2-3 minutes, until top is golden and bubbly.
  9. Garnish with chopped parsley and serve hot.
