Lobster Bisque
Ingredients:
- 2 pounds cooked lobster meat
- 6 cups lobster stock
- 1/2 cup butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1/4 cup sherry
- Salt and pepper, to taste
- Parsley, for garnish
Instructions:
- In a large saucepan, melt the butter over medium heat.
- Add the chopped onion and garlic and cook until softened.
- Stir in the flour until well combined, then gradually add the lobster stock and heavy cream.
- Add the tomato paste and paprika, and bring the mixture to a simmer.
- Reduce heat to low and let simmer for 10-15 minutes until the soup thickens.
- Stir in the cooked lobster meat and sherry and let cook for an additional 5 minutes.
- Season with salt and pepper, to taste.
- Serve hot, garnished with parsley.
