Lobster Bisque

  1. In a large saucepan, melt the butter over medium heat.
  2. Add the chopped onion and garlic and cook until softened.
  3. Stir in the flour until well combined, then gradually add the lobster stock and heavy cream.
  4. Add the tomato paste and paprika, and bring the mixture to a simmer.
  5. Reduce heat to low and let simmer for 10-15 minutes until the soup thickens.
  6. Stir in the cooked lobster meat and sherry and let cook for an additional 5 minutes.
  7. Season with salt and pepper, to taste.
  8. Serve hot, garnished with parsley.
