Loaded Baked Potato
Ingredients:
- 4 large baking potatoes
- 1 cup shredded cheddar cheese
- 4 slices of cooked bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and dry the potatoes, then prick them with a fork a few times.
- Place the potatoes on a baking sheet and bake for 50-60 minutes, or until tender.
- Remove potatoes from the oven and allow them to cool for a few minutes.
- Cut an opening on the top of each potato and scoop out the inside, leaving about 1/4 inch of potato attached to the skin.
- In a mixing bowl, mash the scooped potato with sour cream, half of the shredded cheese, and half of the bacon pieces.
- Sprinkle salt and pepper to taste and mix well.
- Spoon the mixture back into the potato skins and top each with the remaining cheese and bacon.
- Place the potatoes back on the baking sheet and bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Remove from the oven and top with chopped green onions before serving.
