Loaded Baked Potato

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the potatoes, then prick them with a fork a few times.
  3. Place the potatoes on a baking sheet and bake for 50-60 minutes, or until tender.
  4. Remove potatoes from the oven and allow them to cool for a few minutes.
  5. Cut an opening on the top of each potato and scoop out the inside, leaving about 1/4 inch of potato attached to the skin.
  6. In a mixing bowl, mash the scooped potato with sour cream, half of the shredded cheese, and half of the bacon pieces.
  7. Sprinkle salt and pepper to taste and mix well.
  8. Spoon the mixture back into the potato skins and top each with the remaining cheese and bacon.
  9. Place the potatoes back on the baking sheet and bake for an additional 10 minutes, or until cheese is melted and bubbly.
  10. Remove from the oven and top with chopped green onions before serving.
