Lettuce Wraps
Ingredients:
- 1 head of Bibb lettuce
- 1 lb ground chicken
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground ginger
- 1/4 cup hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
Instructions:
- Gently remove the leaves from the head of lettuce and wash and dry them. Place them in the refrigerator to chill while you prepare the filling.
- In a large skillet, cook the ground chicken over medium heat until it is no longer pink.
- Add in the red bell pepper, onion, and garlic and cook until the vegetables are tender, about 5 minutes.
- In a small bowl, mix together the ground ginger, hoisin sauce, soy sauce, rice vinegar, and sesame oil.
- Pour the sauce over the chicken and vegetables and stir to combine. Cook for another 2-3 minutes.
- Remove the lettuce leaves from the refrigerator and spoon the chicken mixture onto each leaf.
- Sprinkle with chopped green onions and peanuts.
- Serve immediately and enjoy your delicious lettuce wraps!
