Lettuce Wraps

  1. Gently remove the leaves from the head of lettuce and wash and dry them. Place them in the refrigerator to chill while you prepare the filling.
  2. In a large skillet, cook the ground chicken over medium heat until it is no longer pink.
  3. Add in the red bell pepper, onion, and garlic and cook until the vegetables are tender, about 5 minutes.
  4. In a small bowl, mix together the ground ginger, hoisin sauce, soy sauce, rice vinegar, and sesame oil.
  5. Pour the sauce over the chicken and vegetables and stir to combine. Cook for another 2-3 minutes.
  6. Remove the lettuce leaves from the refrigerator and spoon the chicken mixture onto each leaf.
  7. Sprinkle with chopped green onions and peanuts.
  8. Serve immediately and enjoy your delicious lettuce wraps!
