Lentil Salad
Ingredients:
- 1 cup green lentils
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup crumbled feta cheese
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions:
- Rinse and drain 1 cup of green lentils. Cook in a pot of boiling water for about 15-20 minutes, or until tender.
- While the lentils are cooking, chop the cucumber, tomatoes, red onion, and parsley.
- In a mixing bowl, combine the cooked lentils with the chopped vegetables.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the lentil and vegetable mixture and toss to evenly coat everything.
- Add the crumbled feta cheese on top and mix gently.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to marry together.
