Lentil Salad

  1. Rinse and drain 1 cup of green lentils. Cook in a pot of boiling water for about 15-20 minutes, or until tender.
  2. While the lentils are cooking, chop the cucumber, tomatoes, red onion, and parsley.
  3. In a mixing bowl, combine the cooked lentils with the chopped vegetables.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  5. Pour the dressing over the lentil and vegetable mixture and toss to evenly coat everything.
  6. Add the crumbled feta cheese on top and mix gently.
  7. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to marry together.
