Lemon Tart

Instructions:

  1. In a large mixing bowl, combine flour, confectioners' sugar, and salt.
  2. Add in cubed butter and mix until mixture resembles coarse crumbs.
  3. Press mixture into the bottom and sides of a 9-inch tart pan with a removable bottom.
  4. Refrigerate the crust for 30 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. In a separate bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest until well combined.
  7. Stir in heavy cream.
  8. Take the tart crust out of the refrigerator and pour in the lemon filling.
  9. Bake for 30-35 minutes, until the filling is set and the crust is golden brown.
  10. Let the tart cool before serving.
  11. Optional: dust with confectioners' sugar and top with fresh lemon slices for garnish.
