Lemon Tart
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 1/4 tsp salt
- 1/2 cup cold butter, cubed
- 3 large eggs
- 3/4 cup granulated sugar
- 1/3 cup lemon juice
- 1 tbsp lemon zest
- 1/3 cup heavy cream
Instructions:
- In a large mixing bowl, combine flour, confectioners' sugar, and salt.
- Add in cubed butter and mix until mixture resembles coarse crumbs.
- Press mixture into the bottom and sides of a 9-inch tart pan with a removable bottom.
- Refrigerate the crust for 30 minutes.
- Preheat your oven to 375°F (190°C).
- In a separate bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest until well combined.
- Stir in heavy cream.
- Take the tart crust out of the refrigerator and pour in the lemon filling.
- Bake for 30-35 minutes, until the filling is set and the crust is golden brown.
- Let the tart cool before serving.
- Optional: dust with confectioners' sugar and top with fresh lemon slices for garnish.
