Lemon Pound Cake

  1. Preheat your oven to 325°F (160°C). Grease a 9x5 inch loaf pan with butter and dust with flour.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Add in the lemon juice, zest, and vanilla extract. Mix until well combined.
  7. Pour the batter into the prepared loaf pan and smooth out the top.
  8. Bake for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10-15 minutes before removing it and placing it on a wire rack to cool completely.
