Lemon Pound Cake
Ingredients:
- 1 1/2 cups (3 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup lemon juice
- Zest of 2 lemons
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 325°F (160°C). Grease a 9x5 inch loaf pan with butter and dust with flour.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs, one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
- Add in the lemon juice, zest, and vanilla extract. Mix until well combined.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before removing it and placing it on a wire rack to cool completely.
