Lemon Poppy Seed Muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tbsp poppy seeds
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1/4 cup lemon juice
- Zest of 1 lemon
- 2 eggs
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large mixing bowl, combine flour, white sugar, brown sugar, baking powder, baking soda, salt, and poppy seeds.
- In a separate mixing bowl, whisk together melted butter, milk, lemon juice, lemon zest, eggs, and vanilla extract.
- Pour the wet mixture into the dry mixture and stir until just combined. Do not overmix.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
