Lemon Meringue Pie

  1. Preheat oven to 375°F.
  2. In a saucepan, combine 1 1/2 cups sugar, cornstarch, and salt.
  3. Gradually stir in water, lemon juice, and egg yolks.
  4. Cook over medium heat, stirring constantly, until mixture thickens and boils.
  5. Remove from heat and stir in lemon zest and butter.
  6. Pour into pie crust.
  7. In a mixing bowl, beat egg whites and cream of tartar until soft peaks form.
  8. Sprinkle in 1/2 cup sugar and continue beating until stiff peaks form.
  9. Spoon meringue onto hot filling, making sure to seal the edges.
  10. Bake for 12-15 minutes, or until meringue is golden brown.
  11. Cool completely before serving.
