Lemon Meringue Pie
Ingredients:
- 1 9-inch pie crust
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 1/4 tsp salt
- 1 1/2 cups water
- 1/2 cup lemon juice
- 3 egg yolks, beaten
- 1 tbsp lemon zest
- 1/4 cup butter
- 4 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup sugar
Instructions:
- Preheat oven to 375°F.
- In a saucepan, combine 1 1/2 cups sugar, cornstarch, and salt.
- Gradually stir in water, lemon juice, and egg yolks.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Remove from heat and stir in lemon zest and butter.
- Pour into pie crust.
- In a mixing bowl, beat egg whites and cream of tartar until soft peaks form.
- Sprinkle in 1/2 cup sugar and continue beating until stiff peaks form.
- Spoon meringue onto hot filling, making sure to seal the edges.
- Bake for 12-15 minutes, or until meringue is golden brown.
- Cool completely before serving.
