Lemon Chicken
Ingredients:
- 6 boneless and skinless chicken breasts
- 1 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/4 cup olive oil
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1/4 cup lemon juice
- 1/2 lemon, thinly sliced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/4 cup butter
- Salt and pepper to taste
Instructions:
- In a shallow dish, mix together flour, salt, pepper, and garlic powder.
- Coat the chicken breasts in the flour mixture, shaking off any excess.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and cook for 1 minute, or until fragrant.
- Add chicken broth, lemon juice, lemon slices, thyme, and parsley to the skillet. Stir and bring to a simmer.
- Return the chicken to the skillet and spoon the sauce over the chicken breasts.
- Cover and cook for an additional 2-3 minutes, or until chicken is heated through and the sauce is thickened.
