Lemon Bars
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 3/4 cup butter, softened
- 4 eggs
- 1 1/2 cups white sugar
- 1/4 cup all-purpose flour
- 2 lemons, juiced
- Zest of 1 lemon
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together 1 1/2 cups flour and confectioners' sugar. Cut in the butter until the mixture resembles coarse crumbs. Press into the prepared pan.
- Bake for 20 minutes in the preheated oven, until firm and slightly golden.
- While the crust is baking, whisk together the eggs, white sugar, 1/4 cup flour, lemon juice, and lemon zest until well blended. Pour over the baked crust.
- Return to the oven and bake for an additional 20 minutes, until the lemon mixture is set. Allow to cool completely before slicing into bars.
- If desired, dust with additional confectioners' sugar before serving.
