Lemon Bars

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  2. In a medium bowl, mix together 1 1/2 cups flour and confectioners' sugar. Cut in the butter until the mixture resembles coarse crumbs. Press into the prepared pan.
  3. Bake for 20 minutes in the preheated oven, until firm and slightly golden.
  4. While the crust is baking, whisk together the eggs, white sugar, 1/4 cup flour, lemon juice, and lemon zest until well blended. Pour over the baked crust.
  5. Return to the oven and bake for an additional 20 minutes, until the lemon mixture is set. Allow to cool completely before slicing into bars.
  6. If desired, dust with additional confectioners' sugar before serving.
