Leek Soup
Ingredients:
- 2 leeks
- 4 tablespoons of butter
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
Instructions:
- Trim the root and dark green parts of the leeks. Cut the remaining light green and white parts into 1-inch pieces and rinse well under cold water.
- In a large pot, melt the butter over medium heat. Add the leeks and cook for 5 minutes, stirring occasionally.
- Pour in the broth and bring to a boil. Reduce heat and let simmer for 20 minutes.
- Using a hand blender or regular blender, blend the soup until smooth. Be careful when blending hot liquids, as they can splatter.
- Return the soup to the pot and stir in the heavy cream. Heat on low until warmed through.
- Season with salt and pepper to taste. Serve hot and enjoy your delicious leek soup!
