Leek Soup

  1. Trim the root and dark green parts of the leeks. Cut the remaining light green and white parts into 1-inch pieces and rinse well under cold water.
  2. In a large pot, melt the butter over medium heat. Add the leeks and cook for 5 minutes, stirring occasionally.
  3. Pour in the broth and bring to a boil. Reduce heat and let simmer for 20 minutes.
  4. Using a hand blender or regular blender, blend the soup until smooth. Be careful when blending hot liquids, as they can splatter.
  5. Return the soup to the pot and stir in the heavy cream. Heat on low until warmed through.
  6. Season with salt and pepper to taste. Serve hot and enjoy your delicious leek soup!
