Lava Cake
Ingredients:
- 1/2 cup all-purpose flour
- 1/4 cup unsalted butter
- 1/4 cup semi-sweet chocolate chips
- 1/4 cup granulated sugar
- 2 eggs
- 2 egg yolks
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: powdered sugar for dusting
- Optional: vanilla ice cream for serving
Instructions:
- Preheat your oven to 425°F (218°C). Grease 4 (6-ounce) ramekins with butter and dust with cocoa powder.
- In a small saucepan, melt the butter and chocolate together over low heat, stirring constantly. Once melted, remove from heat and let cool for 5 minutes.
- In a separate bowl, beat the eggs, egg yolks, sugar, vanilla extract, and salt together until well combined.
- Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly until fully mixed.
- Sift the flour into the chocolate mixture and stir until just combined. Do not overmix.
- Pour the batter evenly into the prepared ramekins.
- Bake for 12-14 minutes, or until the edges of the cakes are set but the center is still soft and slightly jiggly.
- Allow the lava cakes to cool in the ramekins for 1 minute, then gently run a knife around the edges of the cakes and invert them onto individual serving plates.
- Optional: Dust with powdered sugar and serve with a scoop of vanilla ice
