Lava Cake

  1. Preheat your oven to 425°F (218°C). Grease 4 (6-ounce) ramekins with butter and dust with cocoa powder.
  2. In a small saucepan, melt the butter and chocolate together over low heat, stirring constantly. Once melted, remove from heat and let cool for 5 minutes.
  3. In a separate bowl, beat the eggs, egg yolks, sugar, vanilla extract, and salt together until well combined.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly until fully mixed.
  5. Sift the flour into the chocolate mixture and stir until just combined. Do not overmix.
  6. Pour the batter evenly into the prepared ramekins.
  7. Bake for 12-14 minutes, or until the edges of the cakes are set but the center is still soft and slightly jiggly.
  8. Allow the lava cakes to cool in the ramekins for 1 minute, then gently run a knife around the edges of the cakes and invert them onto individual serving plates.
  9. Optional: Dust with powdered sugar and serve with a scoop of vanilla ice
