Latkes

  1. Peel and grate the potatoes and onion.
  2. Place the grated potatoes and onion on a clean dish towel and squeeze out as much moisture as possible.
  3. Transfer the potatoes and onion to a large bowl and mix in the eggs, flour, and seasonings until well combined.
  4. Heat a thin layer of oil in a large skillet over medium-high heat.
  5. Spoon the potato mixture into the hot oil, flattening it out to form round patties.
  6. Fry for 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the latkes from the skillet and place them on a paper towel-lined plate to drain off excess oil.
  8. Serve warm with your choice of toppings such as sour cream, applesauce, or smoked salmon.
