Latkes
Ingredients:
- 2 pounds potatoes
- 1 onion
- 2 eggs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Peel and grate the potatoes and onion.
- Place the grated potatoes and onion on a clean dish towel and squeeze out as much moisture as possible.
- Transfer the potatoes and onion to a large bowl and mix in the eggs, flour, and seasonings until well combined.
- Heat a thin layer of oil in a large skillet over medium-high heat.
- Spoon the potato mixture into the hot oil, flattening it out to form round patties.
- Fry for 3-4 minutes on each side or until golden brown and crispy.
- Remove the latkes from the skillet and place them on a paper towel-lined plate to drain off excess oil.
- Serve warm with your choice of toppings such as sour cream, applesauce, or smoked salmon.
