Lasagna Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 1 can diced tomatoes
- 1 cup tomato sauce
- 1 cup broken lasagna noodles
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until softened.
- Add ground beef, Italian seasoning, salt, and pepper. Cook until beef is browned.
- Add beef broth, diced tomatoes, and tomato sauce. Stir to combine.
- Add broken lasagna noodles. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until noodles are cooked.
- Serve hot, garnished with shredded mozzarella and grated parmesan cheese.
