Lasagna Soup

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until softened.
  2. Add ground beef, Italian seasoning, salt, and pepper. Cook until beef is browned.
  3. Add beef broth, diced tomatoes, and tomato sauce. Stir to combine.
  4. Add broken lasagna noodles. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until noodles are cooked.
  5. Serve hot, garnished with shredded mozzarella and grated parmesan cheese.
