Lamb Curry
Ingredients:
- 1 kg lamb, cut into bite-sized pieces
- 2 onions, chopped
- 3 cloves of garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 cup coconut milk
- Salt and pepper to taste
- Cilantro for garnish (optional)
Instructions:
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the onions and garlic and sauté until softened, about 5 minutes.
- In a small bowl, mix together the curry powder, cumin, coriander, turmeric, and garam masala.
- Add the spice mixture to the pot and stir to combine with the onions and garlic.
- Add the diced lamb to the pot and cook until browned on all sides.
- Pour in the diced tomatoes, chicken broth, and coconut milk, and stir to combine with the lamb and spices.
- Bring the curry to a simmer and then reduce the heat to low.
- Cover the pot and let it cook for 1-2 hours, stirring occasionally. If the curry begins to dry out, add more chicken broth or water as needed.
- Taste the curry and add salt and pepper as desired.
- Serve the lamb curry over rice and garnish with cilantro, if desired.
