Lamb Curry

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the onions and garlic and sauté until softened, about 5 minutes.
  3. In a small bowl, mix together the curry powder, cumin, coriander, turmeric, and garam masala.
  4. Add the spice mixture to the pot and stir to combine with the onions and garlic.
  5. Add the diced lamb to the pot and cook until browned on all sides.
  6. Pour in the diced tomatoes, chicken broth, and coconut milk, and stir to combine with the lamb and spices.
  7. Bring the curry to a simmer and then reduce the heat to low.
  8. Cover the pot and let it cook for 1-2 hours, stirring occasionally. If the curry begins to dry out, add more chicken broth or water as needed.
  9. Taste the curry and add salt and pepper as desired.
  10. Serve the lamb curry over rice and garnish with cilantro, if desired.
