Kung Pao Shrimp
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1/2 cup roasted peanuts
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 red bell pepper, chopped
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tsp red pepper flakes
- 1 tsp sesame oil
- Rice, for serving
Instructions:
- In a large bowl, coat the shrimp with the cornstarch.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the shrimp and cook until golden and crispy, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- In the same skillet, add the peanuts, green onions, garlic, ginger, and red bell pepper. Sauté until fragrant, about 2 minutes.
- In a small bowl, mix together the soy sauce, rice vinegar, honey, red pepper flakes, and sesame oil. Pour the sauce into the skillet with the vegetables and bring to a simmer.
- Add the cooked shrimp back into the skillet and stir until well coated with the sauce.
- Serve over rice and enjoy your homemade Kung Pao Shrimp!
