Korean Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 cup water
- 1/2 cup kimchi, chopped
- 4 green onions, thinly sliced
- 3 tablespoons vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Soy sauce or dipping sauce of your choice
Instructions:
- In a large mixing bowl, combine the flour and water, stirring until smooth.
- Add the chopped kimchi, green onions, salt, and black pepper to the batter and mix well.
- In a large non-stick pan, heat 1 tablespoon of vegetable oil over medium heat.
- Spoon 1/4 cup of the pancake batter onto the pan and spread it out into a thin, round shape.
- Cook for 2-3 minutes, or until the edges start to brown.
- Flip the pancake over and cook for an additional 2-3 minutes, until both sides are golden brown and crispy.
- Remove the pancake from the pan and place on a paper towel to soak up any excess oil. Repeat with the remaining batter.
- Serve the Korean pancakes hot, with soy sauce or your favorite dipping sauce on the side.
