Korean Pancakes

  1. In a large mixing bowl, combine the flour and water, stirring until smooth.
  2. Add the chopped kimchi, green onions, salt, and black pepper to the batter and mix well.
  3. In a large non-stick pan, heat 1 tablespoon of vegetable oil over medium heat.
  4. Spoon 1/4 cup of the pancake batter onto the pan and spread it out into a thin, round shape.
  5. Cook for 2-3 minutes, or until the edges start to brown.
  6. Flip the pancake over and cook for an additional 2-3 minutes, until both sides are golden brown and crispy.
  7. Remove the pancake from the pan and place on a paper towel to soak up any excess oil. Repeat with the remaining batter.
  8. Serve the Korean pancakes hot, with soy sauce or your favorite dipping sauce on the side.
