King Ranch Chicken
Ingredients:
- 2 lbs chicken breast, cooked and shredded
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 can of diced tomatoes with green chilies
- 1 can of cream of chicken soup
- 1 can of cream of mushroom soup
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, mix together the shredded chicken, chopped onion, green and red bell peppers, diced tomatoes with green chilies, cream of chicken soup, cream of mushroom soup, chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- In a separate bowl, mix together the enchilada sauce and the chicken broth.
- Spread a layer of the chicken mixture on the bottom of a 9x13 inch baking dish.
- Layer 6 tortillas on top of the chicken mixture, overlapping as needed.
- Spoon half of the enchilada sauce mixture over the tortillas.
- Spread another layer of the chicken mixture on top of the tortillas and enchilada sauce.
