Key Lime Pie

  1. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
  2. Press the mixture into a 9-inch pie dish, covering the bottom and sides evenly.
  3. In a separate bowl, beat the egg yolks until light and fluffy, then stir in the sweetened condensed milk, key lime juice, and lime zest.
  4. Pour the mixture into the prepared crust.
  5. Bake at 350 degrees for 15 minutes.
  6. Let the pie cool, then refrigerate for at least 2 hours before serving.
  7. In a chilled bowl, whip the heavy cream with the confectioner's sugar until stiff peaks form.
  8. Serve slices of key lime pie topped with a dollop of whipped cream and garnished with lime slices, if desired.
