Keto Bread
Ingredients:
- 3 cups almond flour
- 6 tablespoons psyllium husk powder
- 4 tablespoons coconut flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1 teaspoon xanthan gum
- 8 large eggs
- 2 tablespoons apple cider vinegar
- 8 tablespoons melted butter
- 2 cups boiling water
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, mix together the almond flour, psyllium husk powder, coconut flour, baking powder, salt, and xanthan gum.
- Add in the eggs, apple cider vinegar, and melted butter. Mix well until a dough forms.
- Slowly pour in the boiling water as you continue to mix the dough. The dough will be sticky, but continue mixing until well combined.
- Transfer the dough into the prepared loaf pan and smooth out the top. It doesn't have to be perfect.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the bread from the oven and let it cool for 10-15 minutes in the pan. Then, carefully remove it from the pan and let it cool completely on a wire rack before slicing.
