Kentucky Derby Pie
Ingredients:
- 1 pie crust
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/4 cup bourbon (optional)
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans
Instructions:
- Preheat oven to 350 degrees F.
- Roll out the pie crust and place it in a 9-inch pie dish.
- In a large mixing bowl, combine the flour, granulated sugar, and brown sugar.
- Stir in the melted butter, beaten eggs, and vanilla extract until well combined.
- If desired, add in bourbon.
- Fold in the chocolate chips and chopped pecans.
- Pour the mixture into the prepared pie crust.
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the pie cool for at least 30 minutes before serving.
- Serve with whipped cream or ice cream, if desired.
