Kale Salad

  1. Wash and dry the kale thoroughly.
  2. Remove the thick stems from the kale leaves and tear the leaves into bite-sized pieces. Place in a large bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the kale and use your hands to massage it into the leaves, making sure every piece is coated.
  5. Let the salad sit for at least 10 minutes to allow the dressing to soften the kale.
  6. Meanwhile, cut the avocado into cubes and set aside.
  7. In a small pan, toast the sliced almonds over medium heat until lightly browned, then remove from heat and set aside.
  8. Add the cubed avocado, dried cranberries, and crumbled feta cheese to the bowl with the kale.
  9. Sprinkle the toasted almonds over the top of the salad.
  10. Toss everything together gently.
  11. Serve and enjoy your delicious and nutritious kale salad!
