Kale Salad
Ingredients:
- 1 bunch of kale
- 1 avocado
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Wash and dry the kale thoroughly.
- Remove the thick stems from the kale leaves and tear the leaves into bite-sized pieces. Place in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Drizzle the dressing over the kale and use your hands to massage it into the leaves, making sure every piece is coated.
- Let the salad sit for at least 10 minutes to allow the dressing to soften the kale.
- Meanwhile, cut the avocado into cubes and set aside.
- In a small pan, toast the sliced almonds over medium heat until lightly browned, then remove from heat and set aside.
- Add the cubed avocado, dried cranberries, and crumbled feta cheese to the bowl with the kale.
- Sprinkle the toasted almonds over the top of the salad.
- Toss everything together gently.
- Serve and enjoy your delicious and nutritious kale salad!
