Juicy Roast Chicken
Ingredients:
- 1 whole chicken, about 4-5 pounds
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 lemon, cut into wedges
- 4 cloves of garlic, minced
- 1 onion, cut into wedges
- 1 sprig of fresh rosemary
- 1 sprig of fresh thyme
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Rinse the chicken and pat it dry with paper towels.
- Place the chicken in a roasting pan and rub the olive oil all over the exterior.
- Season the chicken with salt and pepper, making sure to get the seasoning on the inside cavity as well.
- Stuff the inside of the chicken with the lemon wedges, garlic, onion, rosemary, and thyme.
- Tie the legs of the chicken together with kitchen twine.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
- Remove the chicken from the oven and let it rest for 10-15 minutes before serving.
- Serve with your favorite side dishes and enjoy your juicy roast chicken!
