Jollof Rice
Ingredients:
- 2 cups long-grain white rice
- 2 large onions
- 2 large bell peppers
- 4 cloves of garlic
- 1 small can of tomato paste
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 2 cups chicken or beef broth
- 2 teaspoons thyme
- 2 teaspoons curry powder
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions:
- Begin by washing the rice in a fine-mesh strainer until the water runs clear.
- Chop the onions, bell peppers, and garlic into small pieces.
- In a large pot, heat up the vegetable oil and butter over medium heat.
- Add in the chopped onions and sauté until they become translucent.
- Next, add in the chopped bell peppers and garlic and cook for a few minutes until the vegetables soften.
- Add in the tomato paste and stir until well combined with the vegetables.
- Stir in the thyme, curry powder, smoked paprika, cayenne pepper (if using), and salt and pepper to taste.
- Add in the washed rice and stir until coated in the tomato and vegetable mixture.
- Pour in the chicken or beef broth and bring to a boil.
- Once boiling, reduce the heat to low and cover the pot with a lid.
