  1. Begin by washing the rice in a fine-mesh strainer until the water runs clear.
  2. Chop the onions, bell peppers, and garlic into small pieces.
  3. In a large pot, heat up the vegetable oil and butter over medium heat.
  4. Add in the chopped onions and sauté until they become translucent.
  5. Next, add in the chopped bell peppers and garlic and cook for a few minutes until the vegetables soften.
  6. Add in the tomato paste and stir until well combined with the vegetables.
  7. Stir in the thyme, curry powder, smoked paprika, cayenne pepper (if using), and salt and pepper to taste.
  8. Add in the washed rice and stir until coated in the tomato and vegetable mixture.
  9. Pour in the chicken or beef broth and bring to a boil.
  10. Once boiling, reduce the heat to low and cover the pot with a lid.
