Johnnycake
Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1/4 cup melted butter
- Butter or oil for frying
Instructions:
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Slowly pour the wet ingredients into the dry ingredients, stirring until well combined.
- Heat a large skillet or griddle over medium heat and add a small amount of butter or oil.
- Drop spoonfuls of the batter onto the skillet and cook for about 2-3 minutes on each side, until golden brown.
- Repeat with remaining batter, adding more butter or oil to the skillet as needed.
- Serve warm with butter, syrup, or your favorite toppings.
