Johnny Cakes

  1. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the egg and then stir in the milk and melted butter.
  3. Add the wet mixture to the dry mixture and stir until well combined.
  4. Heat a greased griddle or skillet over medium-high heat.
  5. Spoon the batter onto the griddle, using approximately 1/4 cup for each cake.
  6. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
  7. Remove from heat and serve hot with your choice of toppings such as syrup, honey, or jam.
