Johnny Cakes
Ingredients:
- 1 cup cornmeal
- 1/4 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 2 tablespoons melted butter
Instructions:
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, beat the egg and then stir in the milk and melted butter.
- Add the wet mixture to the dry mixture and stir until well combined.
- Heat a greased griddle or skillet over medium-high heat.
- Spoon the batter onto the griddle, using approximately 1/4 cup for each cake.
- Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
- Remove from heat and serve hot with your choice of toppings such as syrup, honey, or jam.
