Jicama Slaw
Ingredients:
- 1 medium jicama
- 1/2 red onion
- 1 red bell pepper
- 1 small bunch of cilantro
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 lime, juiced
- 1 tsp salt
- 1 tsp black pepper
Instructions:
- Using a sharp knife, peel the jicama and cut into thin matchsticks.
- Thinly slice the red onion and red bell pepper.
- Roughly chop the cilantro leaves.
- In a large bowl, mix together the jicama, red onion, red bell pepper, and cilantro.
- In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, salt, and pepper.
- Pour the dressing over the jicama slaw and toss to coat evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to marinate.
- Serve as a side dish or on top of tacos or sandwiches.
