Jicama Slaw

  1. Using a sharp knife, peel the jicama and cut into thin matchsticks.
  2. Thinly slice the red onion and red bell pepper.
  3. Roughly chop the cilantro leaves.
  4. In a large bowl, mix together the jicama, red onion, red bell pepper, and cilantro.
  5. In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, salt, and pepper.
  6. Pour the dressing over the jicama slaw and toss to coat evenly.
  7. Refrigerate for at least 30 minutes before serving to allow the flavors to marinate.
  8. Serve as a side dish or on top of tacos or sandwiches.
