Jicama Salad
Ingredients:
- 1 jicama, thinly sliced
- 1 bell pepper, diced
- 1 small red onion, diced
- 1 cucumber, peeled and diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the jicama, bell pepper, red onion, cucumber, avocado, and cilantro.
- In a small bowl, whisk together the lime juice, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
