  1. Rinse the chicken thighs and pat dry with paper towels.
  2. In a large bowl, whisk together the oil, soy sauce, lime juice, brown sugar, garlic, ginger, scallions, allspice, thyme, black pepper, cinnamon, and cayenne pepper.
  3. Add the chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 1 hour, or up to 24 hours.
  4. Preheat the grill to medium-high heat.
  5. Remove the chicken from the marinade and shake off any excess. Discard the remaining marinade
  6. Grill the chicken for 5-6 minutes per side, or until cooked through. The internal temperature should reach 165°F.
