Jerk Chicken
Ingredients:
- 2 pounds chicken thighs, bone-in and skin-on
- 1/4 cup vegetable oil
- 1/4 cup soy sauce
- 1/4 cup lime juice
- 1/4 cup brown sugar
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 2 tablespoons chopped scallions
- 2 teaspoons ground allspice
- 2 teaspoons dried thyme
- 2 teaspoons black pepper
- 1 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 lime, sliced for garnish
- Fresh chopped parsley for garnish
Instructions:
- Rinse the chicken thighs and pat dry with paper towels.
- In a large bowl, whisk together the oil, soy sauce, lime juice, brown sugar, garlic, ginger, scallions, allspice, thyme, black pepper, cinnamon, and cayenne pepper.
- Add the chicken to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 1 hour, or up to 24 hours.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and shake off any excess. Discard the remaining marinade
- Grill the chicken for 5-6 minutes per side, or until cooked through. The internal temperature should reach 165°F.
- Optional: Place a few lime slices on the grill during the last few minutes of cooking to add a smoky flavor.
