Jelly Roll
Ingredients:
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 eggs, separated
- 1 cup granulated sugar, divided
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/4 cup confectioners' sugar
- 1 cup jelly or jam of your choice
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C). Line a 15x10 inch jellyroll pan with parchment paper and grease lightly.
- In a small bowl, mix together flour, baking powder, and salt. Set aside.
- In a large bowl, beat egg whites until foamy. Gradually add 1/2 cup of sugar and continue to beat until stiff peaks form.
- In a separate bowl, beat egg yolks until thick and lemon colored. Gradually add remaining 1/2 cup of sugar, water, and vanilla extract.
- Add flour mixture to egg yolk mixture and mix until well combined.
- Gently fold in beaten egg whites to the egg yolk mixture.
- Pour batter into prepared pan and spread evenly.
- Bake for 12 to 15 minutes or until the cake is done and springs back when touched.
- Sprinkle a clean kitchen towel with confectioners' sugar. Loosen edges of cake from pan and turn out onto prepared towel.
