Japanese Fried Rice

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add onion and garlic, and cook until softened.
  3. Stir in frozen peas and carrots and cook for 2-3 minutes.
  4. Add cooked rice and green onions to the skillet and stir to combine.
  5. In a small bowl, mix together soy sauce, sesame oil, salt, and pepper.
  6. Pour the sauce over the rice mixture and stir well to combine.
  7. Make a well in the center of the skillet and pour in the beaten eggs.
  8. Stir the eggs into the rice mixture until they are fully cooked.
  9. Remove from heat and serve hot.
